Penne Pomodoro
Hope you are all feeling super relaxed and enjoying your Sunday afternoon. When hunger strikes, try out this week’s simple and delicious recipe .

1 pack of penne (500g)
1 large cloves of garlic in thin slices
1/2 an onion finely chopped
1 bay leaf
100 ml olive oil
400g ripe cherry tomatoes quartered or a tin of chopped tomatoes
20 fresh basil leaves
Lots of freshly grated Parmesan
Salt and pepper to season

Boil the pasta in salted water, following the cooking instructions on the packet of pasta.

Meanwhile, warm the olive oil in a saucepan. Fry the garlic and onion for a couple of minutes, and add the whole bay leaf. Then add the tomatoes and simmer on low heat for 10 mins. Lastly add the fresh basil leaves, take out the bay leaf, and season with salt (and pepper). Serve the pasta with the tomato sauce in bowls, garnish with lots of fresh Parmesan

TIP: the sauce can be served chunky and rustic or you can blend the sauce which is often more preferred by children.
