Shrek meatballs

Shrek meatballs

450g minced Chicken (or Turkey and other meat you prefer)
100ml Olive oil
2 clove of Garlic
1 bag of baby Spinach
1 small red Onion chopped
1 tbsp finely chopped fresh Parsley
1 tbsp finely chopped Basil
Butter for frying

Firstly, mix the olive oil with the garlic, spinach, onion, parsley and basil. I often use a Magimix however, you can use any other blender. Now add the mixture to the minced chicken. Melt some butter in a saucepan, and with the help of a tablespoon shape the meatballs and fry for about 4 minutes on each side.

These meatballs are so delicious as they are, in a lunchbox sandwich,  or served with pasta or salad.
